Ingredients: 1 tsp Baking powder 1 tsp Baking soda 3 Tbs Wheat germ 1 Cup of Mashed bananas 1/4 Cup of Honey 1 Cup of Water 1/3 Cup of Vegetable Oil 1 Egg 1 tsp Pure vanilla extract 2 Cups Unbleached white flour |

Directions: Preheat oven to 400 degrees. Mix all ingredients well in a large bowl. Spoon batter into muffin cups (about 3/4 full). Bake for 20-25 minutes. Muffins are done when a wooden toothpick inserted in the middle of the muffin comes out clean. Remove from pan and cool completely. Mmmmm, golden banana goodness. |
