Harvest Oat and Apple Cookies
These delicious cookies are perfect for fall! 


1 Cup of Wheat Flour 
1 Cup of Brown Rice Flour 
1/2 Cup of Old Fashioned Oats (uncooked) 
1/2 Cup of Lite, Chunky Apple Sauce
1/2 Cup of Shredded, Low Fat Cheddar Cheese 
Two Tablespoons of Honey 
One Egg 
​1/3 Cup of Water


Preheat the oven to 350 degrees. In a large bowl, combine the apple sauce, cheese, honey, egg and water. Mix well. Next, slowly add the flour (both the wheat and rice). Finally, add the uncooked oats. Blend well. If you wish, and don't mind getting a bit messy, use your hands to knead the dough. Once all of the ingredients have been well blended you are now ready to form balls of dough (try to make them all the same size so that they cook evenly). Place each ball on an ungreased cookie sheet and gently flatten with a fork (see picture). Bake the cookies for 20 minutes or until bottoms begin to turn golden brown. Cool completely before serving. Store in an airtight container.
